Delicious recipe I found online...






Sauted shrimp with Macadamia Salsa

If you prefer, you can purchase shrimp that has already been peeled and deveined – might be more costly, but perhaps the convenience is worth it!

2 lbs. shrimp
2 tblsp coconut oil
2 tblsp chopped parsley
1 tblsp fresh garlic minced

Heat coconut oil in skillet over med high heat. Add garlic and sautee briefly (30 seconds). Add shrimp and parsley and sautee for 2-3 minutes until shrimp is cooked through and pink.
(I like to make these in several batches at a time, rather than the entire 2 lbs, since they cook better this way. If you choose to split into batches, make sure you do the same with the rest of the ingredients). Serve with a generous helping of salsa.

Macadamia Salsa

¼ cup macadamias, halved
½ cup chopped tomatoes
1 avocado, peeled, seeded and diced
3tbs coriander, chopped
3tbs parsley, chopped
Olive oil

Anniversary

Tomorrow marks the 90th day of me being a Crossfitter. My very first day meeting my Crossfit coach Fernando, he said "just give me 90 days and I will have you in the best shape of your life."  So let's evaluate the past 90 days..... I've lost 56 pounds. I'm eating a clean healthy diet that gives me loads of energy. I'm physically doing things I never even imagined I would be able to do. Hmmmm....yeah I'd say Fernando kept his word. 

Special thank you to all of my coaches and fellow SFCF members who push me daily to become the best me I can be. You guys rock! I have a long road ahead, but I'm on the right road, going the right direction for once.

Stuffed Zucchini [[Primal Style]]

I made this tonight, and it is definitely my favorite kitchen creation so far! Ok here we go....

Ingredients (All organic of course):

1/2 lb of ground turkey or ground beef
2 Zucchinis
1 Small onion
1 cup chopped mushrooms
4 Cloves of freshgarlic, minced
1/4 cup of egg whites
1/4 cup of Grass-fed Parmesan Cheese
1 tblsp EVOO (or Pam for coating pans)
Pepper to taste, Salt if you like though I never use salt

Slice zucchinis in half lengthwise. Scoop out the insides, leaving enough around the edges so the zucchini is still sturdy (about 1/4 inch). Heat 2 pans on the stove, one will be used to cook meat, the other used for the veggies! While pans are heating, chop up Zucchini insides that were scooped out, mushrooms, and onions. Drizzle pans with Olive Oil. Saute veggies and garlic in one pan. Cook meat thoroughly in in other. When both are well cooked, drain meat and add meat to veggie mixture. Let cool. Preheat oven to 375. When meat and veggie mixture is cool, add eggwhites, seasonings and cheese, mix. Add about 1 cup of water to bottom of cooking dish you're going to use to prevent drying out while cooking. Fill zucchini boats with mixture, and place in cooking tray. Bake at 375 for 40 minutes and ENJOY!

In a happy place...

Doing really well on my diet still. It's amazing what eating clean and healthy can do for a girl! Why didn't anyone tell me about this years ago? lol. I'm down 53 pounds now. It's amazing that my body is still dropping weight so quickly. No slowing down yet, and I LOVE it. Also, my back is finally feeling a lot better, so I'm slowly getting back into my normal workout routine. I did my first normal WOD on Monday and it felt great. I can't tell you how happy I was to be able to do a normal workout. Awesome!! So that's my weekly update. Now I'm going to post the recipe for the amazing dinner I just made. Ciao!

This and That

This weekend I reached the 50 pound mark. Very exciting moment! Losing 50 pounds in 2 months is an insane accomplishment no matter where the starting  point was! I still have a very long way to go, but I'm on the right path and fully motivated.  As for my other goal from my last post, I failed. lol. I didn't cheat at the game as far as food is concerned, however I did have a  few beers. But I did pick a low carb, 55 calorie beer. Does that count for anything? LOL.
In other news, today I started a 30 day Primal Challenge. I'm going 100% clean and by the book for the next month. I'll try to post recipes as I go to give anyone who stumbles upon this blog ideas as well. My back is also feeling a lot better so my workouts should get back to normal soon, so I'm hoping for a very productive month.

Creeping up on 50

So last weekend, I hurt my back pretty bad. It knocked me off my workout schedule for the week. I finally get to hit the gym tomorrow after going stir crazy for a week. The good news is, even though I missed some gym action, I still managed to lose weight this week. Down 48 pounds total...creeping up to that 50 pound mark. I've set 2 goals for myself this week:
1. At the Canes football game on Thursday, my goal is to not cheat on my diet! This is a big test for me, as I'm used to tailgating with plenty of beer and food.
2. Reach the 50 pound mark. I don't care if I have to workout twice a day, I will reach this goal!

Garlic Shrimp with avocado dressing

Ingredients:
•2 medium ripe avocados, pitted and peeled

•1 jalepeno pepper, seeded and finely chopped

•1/2 teaspoon sea salt

•24 peeled and deveined jumbo shrimp

•1 tablespoon olive oil

•1 large garlic clove, minced

•Pinch cayenne pepper

Directions:


Cut up avocados and place them directly into a food processor. Pure with pepper and salt until smooth. Heat grill to medium-high heat. In a bowl, rub shrimp with oil, garlic and cayenne. Thread 3 shrimp onto each of 8 skewers, leaving small spaces between shrimp.  Grill shrimp covered, about 2 1/2 minutes per side. Serve with avocado dip.

Blogging.

Blogging~~>Definitely not my thing, but I wanted to document this journey and share it and maybe even make some new friends along the way. I've been Crossfitting and doing Paleo for about 6 weeks now, and my success thus far has been amazing. I have lost 41 pounds in just over 6 weeks, and am completely amazed at the changes I see in myself. I have a very long way to go, 41 pounds is only a fraction of what I plan to lose all together.

And now I have no clue what else to say [[ I warned you that blogging wasn't my thing lol ]]
